🍽️ Creamy Beef Mince Curry with Mango and Colorful Vegetables

Ingredients
- 1 small broccoli
- salt
- 1 carrot
- 1 large ripe mango
- 2 tbsp olive oil
- 800 g beef mince
- 1 tbsp yellow curry paste
- 400 g coconut milk
- pepper
- curry powder (to taste)
Instructions
- 1. Rinse the broccoli thoroughly under running water.
- 2. Break the broccoli down into small, edible florets.
- 3. Bring a pot of salted water to a boil.
- 4. Boil the broccoli florets in the boiling water for 4 minutes.
- 5. Drain the water and let the broccoli drain well.
- 6. Peel the carrot completely.
- 7. Slice the peeled carrot into thin rounds.
- 8. Put the carrot slices in the boiling salted water for a short time (this is called blanching).
- 9. Peel the mango and carefully remove the flesh from the pit.
- 10. Cut the mango flesh into small, bite-sized cubes.
- 11. Heat the olive oil in a large pan.
- 12. Add the beef mince to the hot pan.
- 13. Fry the meat until it breaks into small crumbs and is lightly browned.
- 14. Add the drained broccoli and carrot slices to the meat.
- 15. Sauté the vegetables and meat together for a short moment.
- 16. Stir in the curry paste and sauté it briefly.
- 17. Deglaze everything with the coconut milk.
- 18. Let the mixture simmer gently for a short time.
- 19. Add the mango cubes to the pan.
- 20. Heat everything briefly until the mango is warm.
- 21. Season the curry to taste with pepper and curry powder at the end.
