🍽️ Spicy Lentil Curry Soup

Ingredients
- 20 g red lentils
- 200 ml classic vegetable broth
- 1 tsp curry powder
- 25 g celery (0.5 small stalk)
- salt
- pepper
- 1 tbsp yogurt (3.5% fat)
Instructions
- 1. Add the lentils and broth to a pot and bring to a boil. Stir in the curry powder, cover the pot, and let it simmer on low heat for 6 minutes.
- 2. Meanwhile, wash the celery, drain it, and clean it. If necessary, remove any tough strings. Set aside the green leaves.
- 3. Slice the celery into about 5 millimeter thick rounds. Add them to the lentils and let everything cook covered for another 3 to 4 minutes.
- 4. Rinse the celery greens, shake off excess water, and cut them into coarse strips.
- 5. Season the lentil curry soup with salt and pepper. Sprinkle with the celery greens and serve with a dollop of yogurt.
