🍽️ Chicken Curry with Fresh Coriander Garnish

Ingredients
- 1 chicken (kitchen-ready, approx. 1.4 kg)
- 250 g onions
- 2 garlic cloves
- 0.5 bunch coriander
- 2 tbsp vegetable oil
- 1 tbsp red curry paste
- 1 pinch ground cumin
- 1 tsp garam masala
- salt
- pepper (from the mill)
- 400 ml poultry broth
Instructions
- 1. Rinse the chicken meat under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Divide the chicken into eight equal pieces.
- 4. Peel the onions and the garlic.
- 5. Dice the onions and the garlic into fine cubes.
- 6. Wash the coriander leaves under cold water.
- 7. Shake off excess water from the coriander.
- 8. Chop the coriander leaves coarsely.
- 9. Heat the oil in a large pan.
- 10. Sear the chicken pieces on all sides until browned.
- 11. Season the meat with salt and pepper.
- 12. Remove the chicken pieces from the pan and set them aside.
- 13. Add the diced onions and garlic to the remaining fat.
- 14. Sauté the vegetables until they are soft.
- 15. Stir the curry paste into the vegetables.
- 16. Return the chicken pieces to the pan.
- 17. Deglaze the dish with the broth.
- 18. Add the spices.
- 19. Simmer the curry over medium heat for about 30 minutes.
- 20. Pre-warm the serving plates.
- 21. Arrange the chicken on the plates.
- 22. Pour the sauce over the meat.
- 23. Garnish the curry with the fresh coriander.
