  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Divide the chicken into eight equal pieces.
  4. 4. Peel the onions and the garlic.
  5. 5. Dice the onions and the garlic into fine cubes.
  6. 6. Wash the coriander leaves under cold water.
  7. 7. Shake off excess water from the coriander.
  8. 8. Chop the coriander leaves coarsely.
  9. 9. Heat the oil in a large pan.
  10. 10. Sear the chicken pieces on all sides until browned.
  11. 11. Season the meat with salt and pepper.
  12. 12. Remove the chicken pieces from the pan and set them aside.
  13. 13. Add the diced onions and garlic to the remaining fat.
  14. 14. Sauté the vegetables until they are soft.
  15. 15. Stir the curry paste into the vegetables.
  16. 16. Return the chicken pieces to the pan.
  17. 17. Deglaze the dish with the broth.
  18. 18. Add the spices.
  19. 19. Simmer the curry over medium heat for about 30 minutes.
