🍽️ Curry Chicken with Pineapple

Ingredients
- 400 g chicken breast fillet
- 200 g pineapple
- 100 ml apple juice
- 1 bunch spring onions
- 1 onion
- 2 tbsp rapeseed oil
- 3 tsp curry powder
- 150 ml clear broth
- 2 tbsp green pumpkin seeds
- salt
- pepper from the mill
Instructions
- 1. Cut the chicken breast into thin strips. Cut the pineapple into bite-sized pieces. Trim and wash the spring onions, then slice them into fine rings.
- 2. Peel the onion and dice it. Heat the oil in a large non-stick pan. Briefly fry the chicken and onions in it. Sprinkle the curry powder over the top and stir it in. Pour in the broth and apple juice. Simmer over low heat for 5 minutes.
- 3. Stir in the spring onions and pineapple and cook for another 2 to 3 minutes. Mix in the pumpkin seeds. Season the dish with salt and pepper to taste.
