  1. 1. Melt the coconut oil and agave syrup in a pot over very low heat.
  2. 2. Meanwhile, chop the nuts and mix them with spelt flakes and flaxseeds. Add cinnamon, salt, and the melted oil-syrup mixture, then stir everything thoroughly.
  3. 3. Spread the mixture on a baking sheet lined with baking paper. Bake the granola in the preheated oven at 180 degrees (convection 160 degrees or gas mark 2 to 3) for about 15 to 20 minutes. Stir the granola several times during baking.
  4. 4. Let the crunchy coconut granola cool down completely, then fill it into airtight jars.
