🍽️ Crispy Crostoli

Ingredients
- 2 tsp grated lemon zest (organic)
- 2 eggs
- 50 g butter
- 40 ml grappa
- 60 g sugar
- 1 vanilla pod (scraped seeds)
- 1 pinch salt
- 350 g flour
- flour (for work surface)
- 750 g clarified butter (for frying)
- powdered sugar (for dusting)
Instructions
- 1. Beat the eggs, sugar, and vanilla seeds vigorously in a bowl until the mixture becomes airy and frothy.
- 2. Stir in the lemon zest, grappa, and a pinch of salt into the egg mixture.
- 3. Melt the butter in a pot and let it cool down slightly.
- 4. Pile the flour onto a clean work surface and press a well into the center.
- 5. Add the slightly cooled melted butter and the frothy egg mixture into the well.
- 6. Knead everything together into a soft, pliable dough.
- 7. Heat the ghee (clarified butter) in a pot.
- 8. Test the heat by placing the handle of a cooking spoon into it: if small bubbles rise, the fat is ready.
- 9. Lightly dust your work surface or a baking board with flour.
- 10. Roll out the dough very thinly.
- 11. Cut the dough into irregular triangles, rectangles, or diamonds using a pastry wheel.
- 12. Ensure that the edges of the dough pieces are about 4 to 5 centimeters long.
- 13. Make a small slit in the center of each dough piece.
- 14. Fry the crostoli in the hot ghee until golden brown.
- 15. Place the finished crostoli on kitchen paper to drain off excess fat.
- 16. Dust the crostoli with powdered sugar.
- 17. Serve the crostoli warm or cold.
