  1. 1. Beat the eggs, sugar, and vanilla seeds vigorously in a bowl until the mixture becomes airy and frothy.
  2. 2. Stir in the lemon zest, grappa, and a pinch of salt into the egg mixture.
  3. 3. Melt the butter in a pot and let it cool down slightly.
  4. 4. Pile the flour onto a clean work surface and press a well into the center.
  5. 5. Add the slightly cooled melted butter and the frothy egg mixture into the well.
  6. 6. Knead everything together into a soft, pliable dough.
  7. 7. Heat the ghee (clarified butter) in a pot.
  8. 8. Test the heat by placing the handle of a cooking spoon into it: if small bubbles rise, the fat is ready.
  9. 9. Lightly dust your work surface or a baking board with flour.
  10. 10. Roll out the dough very thinly.
  11. 11. Cut the dough into irregular triangles, rectangles, or diamonds using a pastry wheel.
  12. 12. Ensure that the edges of the dough pieces are about 4 to 5 centimeters long.
  13. 13. Make a small slit in the center of each dough piece.
  14. 14. Fry the crostoli in the hot ghee until golden brown.
  15. 15. Place the finished crostoli on kitchen paper to drain off excess fat.
  16. 16. Dust the crostoli with powdered sugar.
  17. 17. Serve the crostoli warm or cold.
