  2. 2. Peel the avocados, cut them in half, and remove the pits. Mash the flesh finely with a fork. Peel the shallot and dice it very finely. Stir in the lemon juice, season with salt and pepper, and mix everything well.
  3. 3. Toast the pine nuts in a pan without additional oil until they are golden brown.
  4. 4. Drizzle some oil on the toasted bread and spread the avocado mixture on top. Sprinkle with the toasted pine nuts and serve garnished with some cheese.
