🍳 Crunchy Crostini with Creamy Avocado Dip

Ingredients
- 4 slices bread (e.g. white or mixed bread)
- 2 avocados
- 1 shallot
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
- 2 tbsp pine nuts
- olive oil
- 40 g freshly grated cheese (e.g. Pecorino)
Instructions
- 1. Slice the bread and toast it until golden brown on the grill, in the oven, or in the toaster.
- 2. Peel the avocados, cut them in half, and remove the pits. Mash the flesh finely with a fork. Peel the shallot and dice it very finely. Stir in the lemon juice, season with salt and pepper, and mix everything well.
- 3. Toast the pine nuts in a pan without additional oil until they are golden brown.
- 4. Drizzle some oil on the toasted bread and spread the avocado mixture on top. Sprinkle with the toasted pine nuts and serve garnished with some cheese.
