🍽️ Crunchy Tomato Crostini

Ingredients
- 12 cherry tomatoes
- 1 clove garlic
- 1 tbsp pine nuts
- 2 tbsp freshly grated Manchego
- 4 tbsp olive oil
- salt
- pepper
- 0.5 bunch basil
- 2 spring onions
- 12 slices baguette
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat. Wash the tomatoes, cut them in half, and place them flat on a baking sheet. Peel the garlic and chop it very finely. Also chop the pine nuts finely.
- 2. Mix the chopped garlic, pine nuts, cheese, and one tablespoon of olive oil in a bowl. Season the tomatoes with pepper and cover them with the cheese and garlic mixture. Bake them in the hot oven for about 10 minutes until they are golden brown and bubbling.
- 3. Meanwhile, wash the spring onions and slice them into thin rings. Roughly chop the basil. Mix the vegetables with the basil, season with salt and pepper, and stir in the remaining olive oil.
- 4. Toast the baguette slices in the oven or in a pan until they are crispy. Spread the spring onion mixture onto the bread and place the hot tomatoes on top.
