🍽️ Crunchy Bread Slices with Creamy Chicken Spread

Ingredients
- 250 ml chicken broth
- 2 chicken breast fillets
- 0.5 lemon (juice)
- 4 tbsp olive oil
- 1 bunch arugula
- salt
- pepper (from the mill)
- 12 slices ciabatta
- arugula (for garnish)
Instructions
- 1. Bring the broth to a boil in a pot.
- 2. Add the meat to the boiling broth.
- 3. Let the meat cook covered on low heat for about 8 minutes.
- 4. Remove the meat from the broth and take the pot off the heat.
- 5. Let the meat cool slightly until you can handle it safely.
- 6. Cut the cooled meat into small cubes.
- 7. Place the meat cubes into a blender or food processor.
- 8. Add lemon juice, oil, and about 4 tablespoons of the cooking broth to the meat.
- 9. Blend the mixture in the blender until it forms a fine cream.
- 10. Wash the arugula under cold water and dry it.
- 11. Finely chop the arugula with a knife.
- 12. Stir the chopped arugula into the meat cream.
- 13. Season the spread mixture to taste with salt and pepper.
- 14. Toast the bread slices in a toaster or roast them in the oven until crunchy.
- 15. Spread the creamy chicken mixture evenly over the crunchy bread slices.
- 16. Serve the finished crostini garnished with fresh arugula.
