🍽️ Crispy Crostini with Pea-Mint Spread and Crispy Duck Breast

Ingredients
- 4 slices mixed bread (or white bread)
- 50 g peas (frozen)
- 1 sprig mint (to taste)
- 1 small garlic clove
- 200 g cream cheese (low-fat)
- 12 slices smoked duck breast fillet
- 16 leaves mint
- oil (for frying)
- salt
- pepper
Instructions
- 1. Boil the peas in salted water for 8 minutes. Peel the garlic clove and press it. Finely chop the mint (to taste). Put cream cheese, garlic, mint, and peas into a blender. Blend until smooth and season with salt and pepper.
- 2. Toast the mixed bread in a toaster. Heat the frying oil. Fry the duck breast and mint leaves briefly in the hot oil. Place them on kitchen paper to drain the oil.
- 3. Spread the pea cream onto the toasted bread. Garnish with the fried duck slices and mint leaves.
