🍽️ Fruity Crepes with Homemade Yogurt Ice Cream

Ingredients
- 2 egg yolks
- 100 g powdered sugar
- 400 g yogurt cream
- 350 g red fruit compote (from the jar)
- 0.125 l whipping cream
- 125 g flour
- 0.125 l milk
- 0.125 l mineral water
- 2 eggs
- 1 pinch salt
- butter (for frying)
- 250 g mixed summer fruit
- 1 tsp chopped pistachios
- powdered sugar (for dusting)
Instructions
- 1. Beat the egg yolks together with the sugar in a bowl until creamy.
- 2. Gently fold in the yogurt and the red fruit compote into the egg mixture.
- 3. Whip the cream until stiff.
- 4. Stir the whipped cream into the yogurt and fruit mixture.
- 5. Pour the mixture into a shallow metal dish.
- 6. Place the dish in the freezer.
- 7. Stir the ice cream repeatedly to prevent it from freezing into a solid block.
- 8. Let the ice cream freeze for a total of 6 hours.
- 9. Whisk the eggs, milk, and sparkling water together in a separate bowl.
- 10. Add the flour and a pinch of salt.
- 11. Knead everything into a smooth batter.
- 12. Let the batter rest for 30 minutes.
- 13. Heat the clarified butter in a pan.
- 14. Bake the crepes in batches in the pan.
- 15. Wash and prepare the fruits.
- 16. Use an ice cream scoop to take balls out of the frozen yogurt.
- 17. Arrange the crepes, fruits, and ice cream balls on plates.
- 18. Sprinkle the dish with pistachios.
- 19. Dust the dish lightly with powdered sugar.
