🍽️ Zucchini Pancakes with Smoked Salmon and Toasted Pine Nuts

Ingredients
- 1 small zucchini
- 40 g pine nuts
- 3 eggs
- 250 ml milk
- 125 g flour
- 3 tbsp liquid butter
- salt
- 4 tsp butter
- 200 g smoked salmon (sliced)
- 4 tbsp sour cream
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Trim the hard ends off the zucchini.
- 3. Grate the zucchini flesh into very thin strips using a fine grater.
- 4. Heat a pan without any fat.
- 5. Add the pine nuts to the hot pan.
- 6. Toast the nuts briefly until they are fragrant.
- 7. Remove the pan from the heat and set the toasted pine nuts aside.
- 8. Take a separate bowl.
- 9. Add the eggs, milk, flour, and melted butter to the bowl.
- 10. Whisk the ingredients into a smooth batter.
- 11. Season the batter with a pinch of salt.
- 12. Let the batter rest for 30 minutes.
- 13. Heat a non-stick pan.
- 14. Add a small knob of butter to the hot pan.
- 15. Pour a small amount of batter into the pan.
- 16. Cook the pancake until done.
- 17. Spread some zucchini strips over the still liquid batter.
- 18. Flip the pancake so the zucchini sticks lightly.
- 19. Repeat steps 15 to 18 until four pancakes are baked.
- 20. Invert the finished pancakes onto the plates.
- 21. Top the pancakes with smoked salmon.
- 22. Add one tablespoon of sour cream on top of the salmon.
- 23. Sprinkle the toasted pine nuts over the dish as a final touch.
