  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Slice the salmon into thin pieces.
  4. 4. Finely chop the slices.
  5. 5. Mix the fish with lemon juice and mustard.
  6. 6. Place the mixture in the refrigerator for about 10 minutes.
  7. 7. Pour boiling water over the tomato briefly.
  8. 8. Immediately cool the tomato in cold water.
  9. 9. Peel the cooled tomato.
  10. 10. Cut the tomato into quarters.
  11. 11. Remove the core of the tomato.
  12. 12. Dice the tomato into small cubes.
  13. 13. Wash the dill.
  14. 14. Shake the dill dry.
  15. 15. Set aside four small dill sprigs for garnish.
  16. 16. Finely chop the remaining dill.
  17. 17. Take the salmon mixture out of the refrigerator.
  18. 18. Stir the cream into the salmon mixture.
  19. 19. Stir the chopped dill into the mixture.
  20. 20. Season the salmon with salt and pepper.
  21. 21. Divide the cream among four small bowls.
  22. 22. Garnish the dish with the tomato cubes and dill sprigs.
  23. 23. Serve the salmon tartare alongside fresh baguette.
