  1. 1. Wash the potatoes, peel them, and boil them in salted water for about 20 minutes.
  2. 2. Meanwhile, roughly chop the hazelnuts. Wash the parsley, shake it dry, pluck off the leaves, and chop them.
  3. 3. Heat the milk until it is just about to boil.
  4. 4. Drain the potatoes. Place the pot with the potatoes briefly on the turned-off stove burner and let any remaining liquid evaporate.
  5. 5. Mash the potatoes.
  6. 6. Stir in the warm milk using a whisk. Season with salt, pepper, and a pinch of freshly grated nutmeg.
  7. 7. Let the butter and olive oil foam in a small saucepan. Add the nuts and parsley and sauté briefly. Pour the mixture over the mashed potatoes.
