🍽️ Creamy Egg Salad

Ingredients
- 4 hard-boiled eggs
- 4 tomatoes
- 1 spring onion
- salt

- 50 g mayonnaise
- 100 g sour cream
- 2 tbsp heavy cream
- salt

- 1 tbsp lemon juice
- Tabasco
- 2 tbsp small capers
- small basil
Instructions
- 1. Peel the boiled eggs and cut them into eight equal pieces.
- 2. Wash the tomatoes, cut them into quarters, remove the core, and dice the flesh into small cubes.
- 3. Wash the spring onions, trim off the dry ends, and slice them into thin rings.
- 4. Whisk the sour cream with the mayonnaise, cream, and lemon juice until smooth. Season with a few drops of Tabasco, salt, and pepper, and taste to adjust the flavor.
- 5. Arrange the eggs, tomatoes, and spring onions on plates, pour the sauce over them, sprinkle the capers and basil leaves on top, and finish with a dusting of coarsely ground pepper.
