  2. 2. Wash the tomatoes, cut them into quarters, remove the core, and dice the flesh into small cubes.
  3. 3. Wash the spring onions, trim off the dry ends, and slice them into thin rings.
  4. 4. Whisk the sour cream with the mayonnaise, cream, and lemon juice until smooth. Season with a few drops of Tabasco, salt, and pepper, and taste to adjust the flavor.
  5. 5. Arrange the eggs, tomatoes, and spring onions on plates, pour the sauce over them, sprinkle the capers and basil leaves on top, and finish with a dusting of coarsely ground pepper.
