🍽️ Creamy Tomato Soup

Ingredients
- 1 onion
- 2 garlic cloves
- 4 tbsp olive oil
- 650 g ripe tomatoes
- 2 tbsp tomato paste
- 600 ml vegetable broth
- salt
- pepper (from the mill)
- 1 tsp honey
- 1 tsp dried oregano
- 60 ml whipping cream (30% fat)
- 2 tbsp crème fraîche (30% fat)
- basil
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Chop both ingredients very finely.
- 3. Heat two tablespoons of olive oil in a pot.
- 4. Add the chopped onion and garlic to the pot.
- 5. Fry the vegetables for two to three minutes over medium heat.
- 6. Wash the tomatoes.
- 7. Cut the tomatoes into large pieces.
- 8. Add the tomato pieces to the onion and garlic mixture.
- 9. Simmer the mixture for ten minutes.
- 10. Stir in the tomato paste.
- 11. Pour in the broth.
- 12. Season the soup with salt, pepper, honey, and oregano.
- 13. Let the soup simmer for twenty minutes over medium heat.
- 14. Puree the soup finely.
- 15. Pass the soup through a fine sieve.
- 16. Return the soup to a clean pot.
- 17. Pour the cream into the soup.
- 18. Bring the soup back to a boil.
- 19. Wash the basil.
- 20. Shake the basil dry.
- 21. Finally, adjust the seasoning of the soup.
- 22. Serve the soup in deep bowls.
- 23. Garnish the soup with fresh basil.
- 24. Add a dollop of crème fraîche to the soup.
- 25. Drizzle some olive oil over the soup.
- 26. Serve the soup immediately.
