  3. 3. Fry the onion rings until crispy, stirring constantly.
  4. 4. Place the fried onions on kitchen paper to absorb excess fat.
  5. 5. Wash the spinach thoroughly.
  6. 6. Remove the thick stems from the spinach.
  7. 7. Peel the onion and chop it finely.
  8. 8. Peel the potato.
  9. 9. Grate the potato finely.
  10. 10. Heat oil in a pot.
  11. 11. Sauté the chopped onion briefly.
  12. 12. Add the washed spinach.
  13. 13. Let the spinach wilt.
  14. 14. Pour in a quarter liter of broth.
  15. 15. Add the grated potato.
  16. 16. Bring the mixture to a boil.
  17. 17. Puree the soup smoothly using a hand blender.
  18. 18. Pour in the remaining broth.
  19. 19. Bring the soup to a boil again.
  20. 20. Season the soup with salt and pepper.
  21. 21. Stir in the cream cheese.
  22. 22. Serve the finished soup on plates.
