🍽️ Creamy Spinach Soup

Ingredients
- 1.5 kg spinach
- 1 large onion
- 1 boiled potato
- 1 tbsp vegetable oil
- 0.5 l vegetable broth (without flavor enhancers)
- 100 g cream cheese (0.2% fat)
- salt
- pepper
- 1 small onion
- 1 tsp ghee
Instructions
- 1. Slice the onion into thin rings.
- 2. Heat one teaspoon of oil in a non-stick pan.
- 3. Fry the onion rings until crispy, stirring constantly.
- 4. Place the fried onions on kitchen paper to absorb excess fat.
- 5. Wash the spinach thoroughly.
- 6. Remove the thick stems from the spinach.
- 7. Peel the onion and chop it finely.
- 8. Peel the potato.
- 9. Grate the potato finely.
- 10. Heat oil in a pot.
- 11. Sauté the chopped onion briefly.
- 12. Add the washed spinach.
- 13. Let the spinach wilt.
- 14. Pour in a quarter liter of broth.
- 15. Add the grated potato.
- 16. Bring the mixture to a boil.
- 17. Puree the soup smoothly using a hand blender.
- 18. Pour in the remaining broth.
- 19. Bring the soup to a boil again.
- 20. Season the soup with salt and pepper.
- 21. Stir in the cream cheese.
- 22. Serve the finished soup on plates.
- 23. Garnish the soup with the fried onions.
