  1. 1. Peel the shallots and celery and cut everything into small cubes. Heat the butter in a pot and sauté the shallots in it briefly until they are soft and translucent.
  2. 2. Add the celery and fry it briefly. Deglaze with vegetable broth and cream, let it simmer for about 10 minutes over low heat, and then strain the sauce through a fine sieve.
  3. 3. Reheat the sauce briefly before serving and stir in the mustard. Season to taste with salt and serve, for example, with pasta.
