🍽️ Creamy Radish Soup with Daisies

Ingredients
- 250 ml Buttermilk
- 3 tbsp Lemon juice
- 200 g Plain yogurt
- 100 ml Milk
- 1 tbsp Grated horseradish (from the jar)
- Salt
- Pepper (from the mill)
- 1 pinch Grated nutmeg
- 1 bunch Radishes
- 50 g Buttercup flowers (or fresh herbs to taste)
Instructions
- 1. Put the buttermilk, lemon juice, yogurt, and milk into a large bowl.
- 2. Stir the horseradish into the milk mixture.
- 3. Blend the mixture with a hand blender (an electric device for crushing food) until it is smooth and creamy.
- 4. Season the soup to taste with salt, pepper, and a pinch of ground nutmeg.
- 5. Wash the radishes thoroughly under running water.
- 6. Remove the green stems from the radishes.
- 7. Cut the radishes into thin matchsticks or grate them finely.
- 8. Take half of the prepared radishes and stir them into the soup.
- 9. Blend the soup briefly to make it even creamier.
- 10. Gently fold in the remaining radishes into the soup to keep them crunchy.
- 11. Divide the soup among plates or bowls.
- 12. Garnish each serving with 1 to 2 tablespoons of daisy flowers.
- 13. Serve the soup hot along with toasted bread and butter.
