🍽️ Creamy Carrot Soup

Ingredients
- 700 g carrots
- 2 vegetable onions
- 2 sprigs thyme
- 1 sprig parsley
- 1 sprig basil
- 2 tbsp olive oil
- 1 l vegetable broth
- salt
- pepper
- 1 tsp agave syrup
Instructions
- 1. Peel the carrots and the onions. Cut the vegetables into small cubes. Wash the herbs, shake them dry, pluck the leaves from the stems, and chop them finely.
- 2. Heat olive oil in a pot. Fry the onion cubes until they are translucent. Add the carrot cubes and fry them briefly. Pour in the broth, bring everything to a boil, and let the soup simmer on medium heat for 20 to 25 minutes.
- 3. Puree the soup finely using a hand blender. Add more liquid if necessary. Season the soup with salt, pepper, and agave syrup. Fill the creamy carrot soup into pre-warmed plates and serve it garnished with the chopped herbs.
