  1. 1. Peel the carrots and the onions. Cut the vegetables into small cubes. Wash the herbs, shake them dry, pluck the leaves from the stems, and chop them finely.
  2. 2. Heat olive oil in a pot. Fry the onion cubes until they are translucent. Add the carrot cubes and fry them briefly. Pour in the broth, bring everything to a boil, and let the soup simmer on medium heat for 20 to 25 minutes.
  3. 3. Puree the soup finely using a hand blender. Add more liquid if necessary. Season the soup with salt, pepper, and agave syrup. Fill the creamy carrot soup into pre-warmed plates and serve it garnished with the chopped herbs.
