🍲 Creamy Carrot Lentil Soup

Ingredients
- 400 g carrots
- 1 vegetable onion
- 1 garlic clove
- 300 g red lentils
- 1 untreated lime
- 2 tbsp vegetable oil
- 800 ml vegetable broth
- salt
- pepper (from the mill)
Instructions
- 1. Peel the carrots, the onions, and the garlic.
- 2. Dice the vegetables into small cubes.
- 3. Rinse the lentils under cold, running water.
- 4. Wash the lime under hot water.
- 5. Dry the lime.
- 6. Finely grate the zest of the lime.
- 7. Squeeze the juice of the lime.
- 8. Heat the oil in a pot.
- 9. Sauté the onions and garlic for 1 minute.
- 10. Add the lentils and the carrot cubes.
- 11. Sauté the vegetables briefly.
- 12. Pour in the broth.
- 13. Bring the soup to a boil.
- 14. Simmer the soup over medium heat for 25 to 30 minutes.
- 15. Puree the soup with an immersion blender.
- 16. Season the soup with salt to taste.
- 17. Season the soup with pepper to taste.
- 18. Season the soup with lime juice to taste.
- 19. Serve the soup in pre-warmed bowls.
- 20. Garnish the soup with lime zest.
- 21. Garnish the soup with ground pepper.
