Ingredients
- 250 ml broth (or deglazed pan drippings)
- 100 ml red wine
- 250 ml whipping cream
- 20 g butter
- salt
- pepper (from the mill)
Instructions
- 1. Pour the pan juices into the pan and bring them to a boil.
- 2. Let the liquid simmer gently for 1 to 2 minutes.
- 3. Add the red wine and continue to cook the mixture down.
- 4. Cook until the volume of the liquid has reduced by about half.
- 5. Stir the cream into the sauce.
- 6. Let the sauce thicken slightly until it looks creamy.
- 7. Remove the pan from the heat to take it off the direct heat source.
- 8. Stir the cold butter into the warm sauce.
- 9. Season the sauce finally with salt and pepper.
- 10. Serve the finished dish immediately.
