  2. 2. Wash the spring onions, peel the garlic clove, and remove the stem, seeds, and white membranes from the chili pepper.
  3. 3. Finely chop the spring onions, garlic, and chili pepper.
  4. 4. Add the chopped ingredients to the crab meat in the bowl.
  5. 5. Stir the cream and the egg into the mixture.
  6. 6. Add breadcrumbs gradually until the mixture is firm enough to shape easily.
  7. 7. Season the mixture with salt and pepper.
  8. 8. Mix all ingredients thoroughly by hand or with a spoon.
  9. 9. Shape the mixture into balls or flat cakes weighing about 40 grams each.

  15. 15. Peel the tomatoes, quarter them, and remove the hard core.

  18. 18. Season the tomato mixture with salt and pepper.
  19. 19. Wash the tarragon and shake it dry.
  20. 20. Pluck the fine tarragon leaves from the stems.

  22. 22. Place the butter and chopped tarragon leaves in a small saucepan.

  24. 24. Arrange the fried crab cakes on plates.
  25. 25. Drizzle the warm tarragon butter over the cakes.
