🍽️ Crispy Couscous Schnitzels

Ingredients
- 4 tbsp couscous
- lemon juice
- 4 veal schnitzel (á approx. 125 g)
- salt
- pepper
- 2 tbsp flour
- 1 large egg (L)
- 2 tbsp butter
- 1 tbsp rapeseed oil
Instructions
- 1. Place the couscous in a bowl, cover it with boiling water and let it swell. Then fluff the grains with a fork, add a few drops of lemon juice, put the couscous on a flat plate and let it cool down briefly.
- 2. Wash the schnitzels, pat them dry, season with salt and pepper and dust them lightly with flour. Then dip them into the beaten egg and roll them in the couscous. Press the coating firmly onto the meat.
- 3. Heat the butter and oil in a pan and fry the schnitzels on both sides for about 3 minutes until golden brown. Distribute them on plates and serve with lemon wedges, the couscous salad and a paprika dip.
