🍽️ Couscous Pancakes with Fresh Fruit

Ingredients
- 1 lime (zested and juiced)
- 4 nectarines
- 250 g blueberries
- 150 g couscous
- 2 tbsp sugar
- 1 pinch salt
- 3 eggs
- 150 g flour
- 250 g yogurt
- butter (for baking)
- powdered sugar
Instructions
- 1. Add the lime juice and grated zest to a bowl with the couscous.
- 2. Pour in one cup of water and stir everything well.
- 3. Wash the blueberries thoroughly.
- 4. Pick out any bad ones and gently pat them dry with a kitchen towel.
- 5. Wash the nectarines.
- 6. Cut them in half.
- 7. Remove the stone.
- 8. Slice the flesh into thin wedges.
- 9. Separate the eggs.
- 10. Whisk the egg yolks with the sugar, a pinch of salt, the flour, and the yogurt until you have a smooth, creamy mixture.
- 11. Beat the egg whites until stiff peaks form.
- 12. Gently fold in the couscous first.
- 13. Then fold in the egg whites.
- 14. Gently fold in half of the blueberries.
- 15. Heat some butter in a non-stick pan.
- 16. Add the nectarine wedges.
- 17. Spread the batter over them.
- 18. Cook covered until golden brown.
- 19. Then flip the pancake using a large plate.
- 20. Finish cooking.
- 21. Finally, shred the pancake into small pieces using two forks.
- 22. Dust the finished pancake with powdered sugar.
- 23. Sprinkle with the remaining blueberries.
