🥗 Couscous Salad with Bell Pepper

Ingredients
- 200 g couscous
- 1 red bell pepper
- 1 bunch spring onions
- 0.5 bunch parsley (à 10 g)
- 6 tbsp olive oil (à 60 g)
- 2 lemons (juice)
- salt
- pepper
- cumin
- 1 garlic clove
- 1 red onion
Instructions
- 1. Place the couscous in a bowl. Pour 200 ml of boiling water over it. Cover the bowl and let the couscous soak for 10 minutes. Fluff it up with a fork afterwards.
- 2. Wash the bell pepper and pat it dry. Cut it in half, remove the seeds, and dice the flesh into small cubes. Wash the parsley, shake off excess water, pick off the leaves, and chop them finely. Peel the onion and dice it into small cubes as well.
- 3. In a large bowl, mix the olive oil with lemon juice, salt, pepper, and cumin. Peel the garlic and press it into the mixture. Fold in the couscous, bell pepper cubes, parsley, and onion cubes. Serve the couscous salad with bell pepper in a bowl.
