🥗 Refreshing Couscous Salad with Mint and Parsley

Ingredients
- 100 g instant couscous
- 3 handful flat-leaf parsley
- 1 handful mint
- 300 g tomatoes
- 3 spring onions
- 60 ml olive oil
- 1 lemon (juice)
- salt
- pepper (from the mill)
Instructions
- 1. Put the couscous in a bowl and cover it with cold water. Let the pasta soak for 20 minutes.
- 2. Wash the herbs under running water. Shake off excess water and chop the leaves finely.
- 3. Wash the tomatoes. Cut them in half and remove the inside with a spoon.
- 4. Cut the tomato flesh into small cubes.
- 5. Wash the spring onions. Trim the ends and slice the onions into thin rings.
- 6. Put the soaked couscous in a sieve and let the water drain off.
- 7. Put the drained couscous into a large bowl.
- 8. Add the chopped herbs, the tomato cubes, and the spring onion rings.
- 9. Add the olive oil and the lemon juice.
- 10. Season the salad to taste with salt and pepper.
