  1. 1. Place the couscous in a large bowl. Pour hot water or broth over it and let it swell according to the package instructions. Loosen the grains gently with a fork afterwards.
  2. 2. Meanwhile, wash the tomatoes, halve them, remove the core, and dice them finely. Trim and wash the spring onions, then slice them into thin rings. Peel the garlic and chop it finely.
  3. 3. Mix the vegetables with oil, vinegar, coriander, salt, and pepper. Wash the mint, shake it dry, and cut it into thin strips.
  4. 4. Mix the couscous, vegetables, and mint in a bowl. Serve the salad on plates or bowls and garnish with fresh mint.
