🍽️ Crunchy Couscous with Colorful Bell Pepper Cubes

Ingredients
- 400 g Couscous
- 400 ml boiling salt water
- 2 red bell peppers
- 1 green bell pepper
- 1 large white onion
- 5 garlic cloves
- 1 tsp coriander powder
- 7 tbsp olive oil
- 3 tbsp white wine vinegar
- Salt
- Pepper (from the mill)
- 1 bunch parsley (leaves finely chopped)
Instructions
- 1. Bring water to a boil and add a pinch of salt.
- 2. Pour the boiling water directly over the couscous.
- 3. Let the couscous swell for five minutes.
- 4. Loosen the grains with a fork.
- 5. Let the couscous cool down completely.
- 6. Cut the stem and seeds out of the bell pepper.
- 7. Wash the bell pepper thoroughly.
- 8. Cut the bell pepper into very small cubes.
- 9. Remove all white inner membranes from the bell pepper.
- 10. Peel the onion and the garlic.
- 11. Chop the onion and the garlic finely.
- 12. Heat oil in a pan.
- 13. Sauté the onions and garlic in the hot oil.
- 14. Wait until the vegetables become translucent.
- 15. Add the bell pepper cubes to the pan.
- 16. Sauté everything for three minutes over medium heat.
- 17. Season the mixture with coriander.
- 18. Add salt and pepper.
- 19. Add vinegar to the pan.
- 20. Pour in half a cup of hot water.
- 21. Get a large bowl.
- 22. Put the cooled couscous into the bowl.
- 23. Add the sautéed vegetables to the couscous.
- 24. Chop the parsley finely.
- 25. Add the chopped parsley.
- 26. Mix all ingredients well together.
