🍽️ Couscous-Lentil Salad

Ingredients
- 1 shallot
- 3 tbsp olive oil
- 60 g red lentils
- 60 g couscous
- 400 ml vegetable broth
- 3 stalks celery
- 3 tbsp chopped parsley
- juice of one lemon
- salt
- pepper (from the mill)
Instructions
- 1. Peel the shallot and chop it finely. Heat some oil in a pot and sauté the shallot until it is soft and translucent. Add the lentils and couscous and toast them briefly. Then pour in the vegetable broth and let everything simmer on low heat for 15 minutes.
- 2. Wash the celery and cut it very finely. Mix it with the parsley and lemon juice into the lentil-couscous mixture. Season with salt and pepper. Let the salad rest for a moment and serve it lukewarm.
