🍽️ Crispy Cordon Bleu Cutlets

Ingredients
- 4 thin veal schnitzel (approx. 160 g each)
- 4 slices cooked ham
- 4 slices cheddar cheese
- 2 tbsp spelt flour
- 1 egg
- 80 g breadcrumbs
- butter (for frying)
- salt
- pepper (from the mill)
- lemon wedges
- 40 g lamb's lettuce
Instructions
- 1. Season the meat slices with salt and pepper.
- 2. Place one slice of ham and cheese on each meat slice.
- 3. Fold the meat over.
- 4. Press the edges firmly together to seal them.
- 5. Lightly coat the cutlets in flour.
- 6. Whisk the eggs in a shallow dish.
- 7. Season the egg mixture lightly with salt.
- 8. Place the breadcrumbs in a second dish.
- 9. Dip the cutlets into the egg mixture.
- 10. Then coat the cutlets in the breadcrumbs.
- 11. Ensure they are fully coated.
- 12. Fry the cutlets in a pan with hot butter over medium heat.
- 13. Fry them until golden brown on both sides.
- 14. Place the cutlets briefly on kitchen paper.
- 15. Let the excess fat drain off.
- 16. Wash the corn salad.
- 17. Shake the salad dry.
- 18. Serve the salad on plates alongside the Cordon bleu.
- 19. Drizzle everything with lemon juice.
- 20. Serve the dish.
