🍽️ Crispy Turkey Cordon Bleu

Ingredients
- 4 Turkey cutlets (kitchen-ready, 160 g each)
- Pepper (from the mill)
- 1 tsp Paprika powder (mild sweet)
- 4 slices cooked ham
- 60 g firm Edelpilzkäse
- 6 tbsp Spelt flour
- 2 Eggs
- Salt
- 8 tbsp Breadcrumbs
- Ghee
- 1 handful Parsley (5 g each)
- 1 Lemon (in wedges)
Instructions
- 1. Rinse the turkey cutlets under cold water.
- 2. Pat the cutlets completely dry with a kitchen towel.
- 3. Pound the cutlets flat with a meat mallet.
- 4. Season both sides of the cutlets with pepper and paprika powder.
- 5. Slice the edamame cheese into thin slices.
- 6. Place one slice of ham on one half of a cutlet.
- 7. Place one slice of cheese on the ham.
- 8. Fold the empty half of the cutlet over the filling.
- 9. Insert wooden skewers through the edges to secure the filling.
- 10. Put the flour into a shallow dish.
- 11. Dredge the cutlets briefly in the flour and shake off excess flour.
- 12. Whisk the eggs in a second shallow dish.
- 13. Lightly salt the whisked eggs.
- 14. Put the breadcrumbs into a third separate dish.
- 15. Dip the floured cutlets into the egg mixture.
- 16. Coat the egg-wet cutlets in the breadcrumbs.
- 17. Press the breadcrumbs firmly onto the meat with the flat of your hand.
- 18. Let the breaded cutlets rest briefly.
- 19. Heat 3 tablespoons of ghee in a large pan.
- 20. Set the heat to medium to high.
- 21. Place the stuffed cutlets carefully into the hot pan.
- 22. Reduce the heat slightly to prevent burning.
- 23. Fry the cutlets from the first side for 3 to 5 minutes until golden brown.
- 24. Turn the cutlets and fry the other side for another 3 to 5 minutes until golden brown.
- 25. Remove the cutlets from the pan.
- 26. Place the cutlets on kitchen paper to absorb excess fat.
- 27. Wash the fresh parsley under cold water.
- 28. Shake the parsley dry.
- 29. Pick the parsley leaves off the stems.
- 30. Cut a lemon into wedges.
- 31. Serve the turkey cordon bleu with the lemon wedges and parsley.
