  3. 3. Pound the cutlets flat with a meat mallet.
  4. 4. Season both sides of the cutlets with pepper and paprika powder.
  5. 5. Slice the edamame cheese into thin slices.
  6. 6. Place one slice of ham on one half of a cutlet.
  7. 7. Place one slice of cheese on the ham.
  8. 8. Fold the empty half of the cutlet over the filling.
  9. 9. Insert wooden skewers through the edges to secure the filling.
  10. 10. Put the flour into a shallow dish.
  11. 11. Dredge the cutlets briefly in the flour and shake off excess flour.
  12. 12. Whisk the eggs in a second shallow dish.
  13. 13. Lightly salt the whisked eggs.
  14. 14. Put the breadcrumbs into a third separate dish.
  15. 15. Dip the floured cutlets into the egg mixture.
  16. 16. Coat the egg-wet cutlets in the breadcrumbs.
  17. 17. Press the breadcrumbs firmly onto the meat with the flat of your hand.
  18. 18. Let the breaded cutlets rest briefly.
  19. 19. Heat 3 tablespoons of ghee in a large pan.
  20. 20. Set the heat to medium to high.
  21. 21. Place the stuffed cutlets carefully into the hot pan.
  22. 22. Reduce the heat slightly to prevent burning.
  23. 23. Fry the cutlets from the first side for 3 to 5 minutes until golden brown.
  24. 24. Turn the cutlets and fry the other side for another 3 to 5 minutes until golden brown.
