  4. 4. Press the edges firmly together so the filling stays inside.
  5. 5. Turn the cutlets briefly in flour.
  6. 6. Make sure they are only lightly dusted.
  7. 7. Whisk the eggs in a shallow dish.
  8. 8. Add a pinch of salt to the egg mixture.
  9. 9. Place the breadcrumbs in a second dish.
  10. 10. Turn the cutlets first in the egg mixture.
  11. 11. Then turn them completely in the breadcrumbs.
  12. 12. Fry the cutlets in a pan with hot butter.
  13. 13. Fry them until golden brown over medium heat.
