🍰 Cherry Chocolate Cookies

Ingredients
- 100 g dried cherries
- 300 g dark chocolate
- 250 g soft butter
- 200 g cane sugar
- 0.5 tsp sea salt
- 1 packet bourbon vanilla sugar
- 2 eggs
- 300 g whole wheat flour
- 100 g rolled oats
- 1 packet baking powder
Instructions
- 1. Roughly chop the chocolate. Take 100 grams of it and melt it over a hot water bath (place a bowl over a pot of hot water). Set the rest of the chocolate aside.
- 2. Beat the butter with the sugar, salt, and vanilla sugar until creamy. Stir in the eggs one by one, then mix in the melted chocolate.
- 3. Mix flour, oat flakes, baking powder, and the remaining chocolate pieces in a bowl. Add this mixture to the butter mixture and stir until you have a smooth dough. Place the dough in the refrigerator for about 1 hour.
- 4. Using an ice cream scoop, form about 30 small balls from the dough. Place them with some space between each other on two baking sheets lined with baking paper.
- 5. Bake the cookies in the preheated oven at 180 degrees Celsius conventional heat (fan 160 degrees; gas mark 2 to 3) for about 15 minutes. Remove them and let them cool completely on a wire rack.
