  1. 1. Choose your pan: either a 26 cm round springform pan or a 24 x 24 cm square one. Grease the chosen pan thoroughly.
  2. 2. Chop 100 g chocolate and melt half of it in a hot water bath. Beat 200 g margarine, 175 g sugar, vanilla sugar, and a pinch of salt until creamy. Stir in one egg. Mix 300 g flour with baking powder, add it to the butter-sugar mixture, add the chopped chocolate, and mix everything well.
  3. 3. Set aside one quarter of the dough and form it into coarse pieces. Cover them and place them in the refrigerator.
  4. 4. Stir the melted chocolate into the remaining dough and press it into the pan to form a base with a rim. Place the pan in the refrigerator for 30 minutes.
  5. 5. Separate 2 eggs. Beat the egg whites stiff and stir in 50 g sugar. Mix cream cheese, sour cream, egg yolks, starch, and 75 g sugar until smooth. Gently fold in the egg whites.
  6. 6. Preheat the oven to 150 degrees Celsius fan setting.
  7. 7. Spread half of the cheese mixture over the dough base, distribute the chilled dough pieces on top, and cover with the remaining cheese mixture. Bake the cake on the lowest rack for 30–35 minutes.
  8. 8. Chop 30 g chocolate. Turn off the oven, sprinkle the chocolate over the cake, and let it cool with the door slightly ajar for 20–30 minutes. Remove the cake and let it cool completely before enjoying.
