🥤 Cocktail Sauce with Cognac

Ingredients
- 2 egg yolks
- 2 tbsp orange juice
- salt
- pepper
- 0.25 l vegetable oil
- 3 tbsp ketchup
- 2 tbsp cognac
- 1 tomato
- 0.125 l whipping cream
Instructions
- 1. Put the egg yolk, orange juice, salt, and pepper in a bowl and whisk everything well with a wire whisk. Add the oil slowly and drop by drop while stirring constantly. Then stir in the ketchup and cognac.
- 2. Wash the tomato, blanch it briefly in boiling water, peel it, remove the inside, and puree the flesh. Whip the cream until stiff and gently fold in the tomato puree.
