  1. 1. Peel the clementines and carefully cut out the individual fruit segments from the membranes using a small knife. Make sure to catch the juice that comes out.
  2. 2. Peel the ginger and chop it very finely.
  3. 3. Wash the mint, shake it dry, pluck off the leaves, and cut them into fine strips.
  4. 4. Mix the honey, clementine juice, ginger, and yogurt well together. Then fold in the clementine segments.
  5. 5. Divide the clementine yogurt between two small bowls. Finally, sprinkle the chopped mint on top.
