🍰 Clafoutis with Apricots, Peaches, and Gooseberries

Ingredients
- 3 Apricots
- 1 Peach
- 200 g Gooseberries
- 0.5 Vanilla pod
- 5 Eggs
- 80 g Coconut blossom sugar
- 1 Pinch Salt
- 1 Tsp. Organic Lemon zest
- 100 g Spelt wholemeal flour
- 170 ml Milk (3.5 % Fat)
- 1 Tbsp Rapeseed oil
Instructions
- 1. Thoroughly wash the apricots, peaches, and berries. Cut the apricots and peaches in half, remove the pits, and slice them into wedges. Slice the vanilla pod lengthwise and scrape out the seeds with a knife.
- 2. Separate the eggs so you have distinct yolks and whites. Whisk the egg yolks with the sugar, vanilla seeds, a pinch of salt, the lemon zest, and the flour until you have a smooth mixture.
- 3. Beat the egg whites until they form stiff peaks. Slowly stir the milk into the egg yolk mixture and gently fold in the egg whites.
- 4. Brush the baking dish with some oil. Pour the batter into the dish, distribute the fruit on top, and bake the clafoutis in the preheated oven at 160 degrees Celsius conventional heat (or 140 degrees Celsius fan-assisted; gas level 2 to 3) for 35 to 40 minutes.
- 5. Serve the clafoutis warm.
