🍽️ Crispy Clafoutis with Juicy Apricots

Ingredients
- 2 tsp soft butter
- 500 g apricots
- 4 eggs
- 2 tbsp sugar
- 2 tbsp vanilla sugar
- 80 g flour
- 1 pinch salt
- 1 small spoonful baking powder
- 100 g quark (20% fat)
- 75 ml milk (3.5% fat)
- 2 tbsp chopped pistachios
- 1 tbsp powdered sugar
Instructions
- 1. Lightly grease a round baking dish with butter.
- 2. Thoroughly wash the apricots.
- 3. Halve the apricots and remove the pits.
- 4. Place the apricot halves in the prepared dish with the cut side facing up.
- 5. Whisk the eggs together with the sugar and vanilla sugar until frothy.
- 6. Add flour, a pinch of salt, baking powder, quark, and milk to the egg mixture.
- 7. Stir everything until the batter is smooth and well combined.
- 8. Pour the batter evenly over the apricots in the dish.
- 9. Preheat the oven to 200 degrees Celsius conventional heat (alternatively 180 degrees Celsius fan-assisted or gas mark 3).
- 10. Bake the clafoutis for about 35 minutes until golden brown.
- 11. Remove the finished clafoutis from the oven.
- 12. Generously sprinkle it with pistachios.
- 13. Lightly dust it with powdered sugar before serving.
