  1. 1. Lightly grease a round baking dish with butter.
  2. 2. Thoroughly wash the apricots.
  3. 3. Halve the apricots and remove the pits.
  4. 4. Place the apricot halves in the prepared dish with the cut side facing up.
  5. 5. Whisk the eggs together with the sugar and vanilla sugar until frothy.
  6. 6. Add flour, a pinch of salt, baking powder, quark, and milk to the egg mixture.
  7. 7. Stir everything until the batter is smooth and well combined.
  8. 8. Pour the batter evenly over the apricots in the dish.
  9. 9. Preheat the oven to 200 degrees Celsius conventional heat (alternatively 180 degrees Celsius fan-assisted or gas mark 3).
  10. 10. Bake the clafoutis for about 35 minutes until golden brown.
  11. 11. Remove the finished clafoutis from the oven.
  12. 12. Generously sprinkle it with pistachios.
  13. 13. Lightly dust it with powdered sugar before serving.
