🍽️ Crispy Ciabatta Sticks with Olives and Tomatoes

Ingredients
- 125 g green olives (pitted)
- 125 g black olives (pitted)
- 150 g dried tomatoes
- 0.5 cube yeast
- 520 g spelt wholemeal flour
- 0.5 tsp salt
- 1 tsp honey
- 3 tbsp olive oil
Instructions
- 1. Finely chop the olives and the dried tomatoes.
- 2. Dissolve the yeast in 350 milliliters of lukewarm water.
- 3. Mix the yeast solution, 500 grams of flour, salt, and honey with the dough hooks of a hand mixer until you have a smooth dough.
- 4. Stir 2 tablespoons of olive oil into the dough.
- 5. Gently fold in the chopped olives and tomatoes.
- 6. Grease another bowl with the remaining olive oil.
- 7. Transfer the dough into the bowl.
- 8. Cover the bowl.
- 9. Let the dough rise at room temperature for about 1 hour.
- 10. Turn the dough out onto a generously floured work surface.
- 11. Dust the dough liberally with flour.
- 12. Stretch the dough roughly into a rectangle without kneading it.
- 13. Cut the dough lengthwise into strips using a sharp knife.
- 14. Ensure the strips are each 25 centimeters long and 2 centimeters thick.
- 15. Place the dough strips on a baking sheet lined with baking paper, leaving enough space between them.
- 16. Preheat the oven to 200 degrees Celsius (180 degrees Celsius fan or gas mark 3).
- 17. Bake the sticks for about 20 minutes until golden brown.
