  2. 2. Dip the fruits briefly into boiling water (this is called blanching).
  3. 3. Peel the skin off the apricots.
  4. 4. Halve the fruits and remove the pits.
  5. 5. Cut the apricots into quarters.
  6. 6. Finely chop one third of the apricots.
  7. 7. Peel the ginger.
  8. 8. Peel the onions.
  9. 9. Finely chop the ginger and onions.
  10. 10. Slice the chili into thin rings.
  11. 11. Wash the lime leaves.
  12. 12. Cut the lime leaves into fine strips.
  13. 13. Put all prepared ingredients into a pot.
  14. 14. Heat the mixture slowly while stirring constantly.
  15. 15. Let the chutney simmer over medium heat for about 40 minutes.
  16. 16. Fill the finished chutney into jars.
  17. 17. Seal the jars tightly.
  18. 18. Turn the jars upside down.
  19. 19. Let the jars cool down.
