🍽️ Sweet and spicy ginger-apricot chutney

Ingredients
- 1 kg apricots
- 2 cm ginger
- 2 onions
- 1 chili pepper
- 3 lime leaves
- 270 ml apple cider vinegar
- 150 ml orange juice
- 1 tsp coriander seeds
- 300 g cane sugar
Instructions
- 1. Make a small incision in the apricots.
- 2. Dip the fruits briefly into boiling water (this is called blanching).
- 3. Peel the skin off the apricots.
- 4. Halve the fruits and remove the pits.
- 5. Cut the apricots into quarters.
- 6. Finely chop one third of the apricots.
- 7. Peel the ginger.
- 8. Peel the onions.
- 9. Finely chop the ginger and onions.
- 10. Slice the chili into thin rings.
- 11. Wash the lime leaves.
- 12. Cut the lime leaves into fine strips.
- 13. Put all prepared ingredients into a pot.
- 14. Heat the mixture slowly while stirring constantly.
- 15. Let the chutney simmer over medium heat for about 40 minutes.
- 16. Fill the finished chutney into jars.
- 17. Seal the jars tightly.
- 18. Turn the jars upside down.
- 19. Let the jars cool down.
