🍽️ Spicy-Sweet Gooseberry Chutney

Ingredients
- 2 onions
- 600 g fresh gooseberries
- 4 tbsp sugar
- 2 tbsp mustard seeds
- 150 ml dry white wine
- 100 ml vegetable broth
- salt
- pepper (from the mill)
- vinegar (to taste)
Instructions
- 1. Peel the onions.
- 2. Cut the onions into fine cubes.
- 3. Wash the gooseberries thoroughly.
- 4. Remove hard stems or ends from the berries.
- 5. Put the sugar in a pot.
- 6. Let the sugar melt slowly and turn brown (caramelize).
- 7. Add the onion cubes to the pot.
- 8. Add the gooseberries to the pot.
- 9. Add the mustard seeds to the pot.
- 10. Stir the ingredients constantly.
- 11. Bring the mixture to a boil.
- 12. Deglaze the mixture with the white wine.
- 13. Add the broth.
- 14. Let the chutney simmer for about 20 minutes over medium heat.
- 15. Season the chutney with salt to taste.
- 16. Season the chutney with pepper to taste.
- 17. Season the chutney with vinegar to taste.
- 18. Serve the chutney together with a piece of cheese.
