  3. 3. Place the red beets into the boiling salted water.
  4. 4. Boil the beets for 20 minutes until they are still firm to the bite.
  5. 5. Remove the beets from the pot.
  6. 6. Let the water drain from the beets.
  7. 7. Peel the skin off the cooled red beets.
  8. 8. Wear rubber gloves while peeling to protect your hands from staining.
  9. 9. Cut the peeled red beets into small cubes.
  10. 10. Peel the onions.
  11. 11. Peel the apples.
  12. 12. Cut the onions in half.
  13. 13. Slice the onion halves into thin slices.
  14. 14. Core the apples.
  15. 15. Cut the apple flesh into cubes.
  16. 16. Peel the ginger.
  17. 17. Chop the ginger very finely.
  18. 18. Pour the vinegar into a pot.
  19. 19. Add the red wine to the pot.
  20. 20. Add the cloves to the pot.
  21. 21. Add the allspice berries to the pot.
  22. 22. Bring the liquid in the pot to a boil.
  23. 23. Add the onion slices to the boiling mixture.
  24. 24. Add the apple cubes to the mixture.
  25. 25. Let the mixture simmer gently for 10 minutes.
  26. 26. Add the red beet cubes to the pot.
  27. 27. Add the chopped ginger to the pot.
  28. 28. Add the raisins to the pot.
  29. 29. Add the brown sugar to the pot.
  30. 30. Cook the entire mixture for another 15 minutes.
  31. 31. Remove the cloves from the chutney mixture.
  32. 32. Remove the allspice berries from the chutney mixture.
  33. 33. Season the chutney with a little salt to taste.
  34. 34. Fill the hot chutney mixture into sterilized jars.
  35. 35. Seal the jars tightly.
  36. 36. Place a damp dish towel on a surface.
  37. 37. Place the sealed jars on the towel.
  38. 38. Turn the jars upside down.
  39. 39. Let the jars cool for 15 minutes.
  40. 40. Turn the jars right side up again.
  41. 41. Let the jars cool completely.
  42. 42. Store the jars in a cool place.
  43. 43. Avoid direct light when storing.
  44. 44. Consume the chutney quickly after opening.
