🍽️ Homemade Red Beet Chutney

Ingredients
- 400 g red beets
- salt
- 150 g onions
- 200 g tart apples (e.g. Boskop)
- 20 g fresh ginger
- 200 ml red wine vinegar
- 50 ml dry red wine
- 3 cloves
- 6 allspice berries
- 5 tbsp raisins
- 5 tbsp cane sugar
Instructions
- 1. Rinse the red beets under running water.
- 2. Fill a pot with water and add some salt.
- 3. Place the red beets into the boiling salted water.
- 4. Boil the beets for 20 minutes until they are still firm to the bite.
- 5. Remove the beets from the pot.
- 6. Let the water drain from the beets.
- 7. Peel the skin off the cooled red beets.
- 8. Wear rubber gloves while peeling to protect your hands from staining.
- 9. Cut the peeled red beets into small cubes.
- 10. Peel the onions.
- 11. Peel the apples.
- 12. Cut the onions in half.
- 13. Slice the onion halves into thin slices.
- 14. Core the apples.
- 15. Cut the apple flesh into cubes.
- 16. Peel the ginger.
- 17. Chop the ginger very finely.
- 18. Pour the vinegar into a pot.
- 19. Add the red wine to the pot.
- 20. Add the cloves to the pot.
- 21. Add the allspice berries to the pot.
- 22. Bring the liquid in the pot to a boil.
- 23. Add the onion slices to the boiling mixture.
- 24. Add the apple cubes to the mixture.
- 25. Let the mixture simmer gently for 10 minutes.
- 26. Add the red beet cubes to the pot.
- 27. Add the chopped ginger to the pot.
- 28. Add the raisins to the pot.
- 29. Add the brown sugar to the pot.
- 30. Cook the entire mixture for another 15 minutes.
- 31. Remove the cloves from the chutney mixture.
- 32. Remove the allspice berries from the chutney mixture.
- 33. Season the chutney with a little salt to taste.
- 34. Fill the hot chutney mixture into sterilized jars.
- 35. Seal the jars tightly.
- 36. Place a damp dish towel on a surface.
- 37. Place the sealed jars on the towel.
- 38. Turn the jars upside down.
- 39. Let the jars cool for 15 minutes.
- 40. Turn the jars right side up again.
- 41. Let the jars cool completely.
- 42. Store the jars in a cool place.
- 43. Avoid direct light when storing.
- 44. Consume the chutney quickly after opening.
