  2. 2. Cut the plums in half and remove the stones.
  3. 3. Cut the plum halves into small wedges.
  4. 4. Peel the red onions.
  5. 5. Cut the onions into very fine strips.
  6. 6. Heat oil in a pan.
  7. 7. Add the onion strips to the hot pan.
  8. 8. Sauté the onions for 1 to 2 minutes until they become soft.
  9. 9. Add the plums to the pan.
  10. 10. Add the honey to the pan.
  11. 11. Add the red wine to the pan.
  12. 12. Add the vinegar to the pan.
  13. 13. Add the peppercorns to the pan.
  14. 14. Add the cloves to the pan.
  15. 15. Add the allspice to the pan.
  16. 16. Add the oregano to the pan.
  17. 17. Add the bay leaf to the pan.
  18. 18. Set the heat to low.
  19. 19. Let the mixture simmer without a lid.
  20. 20. Simmer the mixture for about 45 minutes.
  21. 21. Stir the mixture occasionally to prevent burning.
  22. 22. Add a little water if necessary.
  23. 23. Continue simmering until the mixture reduces to a thick chutney.
  24. 24. Season the chutney with salt.
