  2. 2. Cut the fruits in half.
  3. 3. Remove the seeds.
  4. 4. Dice the flesh into small cubes.
  5. 5. Peel the shallots.
  6. 6. Chop the shallots very finely.
  7. 7. Put the vinegar in a pot.
  8. 8. Add the sugar.
  9. 9. Add the mustard.
  10. 10. Sprinkle in the spice mix Garam Masala.
  11. 11. Pour 150 milliliters of water into the pot.
  12. 12. Bring the mixture to a boil.
  13. 13. Let the liquid simmer gently for about 10 minutes.
  14. 14. Stir in the papaya cubes.
  15. 15. Add the chopped shallots.
  16. 16. Let the whole thing simmer on low heat for another 10 minutes.
  17. 17. Stir the chutney occasionally.
  18. 18. Season the chutney to taste with salt.
  19. 19. Add cayenne pepper to taste.
  20. 20. Fill the warm mixture into prepared jars.
  21. 21. Seal the jars tightly.
  22. 22. Let the contents cool down completely.
