🍽️ Fruity Papaya Chutney

Ingredients
- 1 kg ripe papaya
- 4 shallots
- 250 ml white wine vinegar
- 150 g brown sugar
- 1 tbsp black mustard seeds
- 1 tbsp garam masala
- salt
- cayenne pepper
Instructions
- 1. Peel the papayas.
- 2. Cut the fruits in half.
- 3. Remove the seeds.
- 4. Dice the flesh into small cubes.
- 5. Peel the shallots.
- 6. Chop the shallots very finely.
- 7. Put the vinegar in a pot.
- 8. Add the sugar.
- 9. Add the mustard.
- 10. Sprinkle in the spice mix Garam Masala.
- 11. Pour 150 milliliters of water into the pot.
- 12. Bring the mixture to a boil.
- 13. Let the liquid simmer gently for about 10 minutes.
- 14. Stir in the papaya cubes.
- 15. Add the chopped shallots.
- 16. Let the whole thing simmer on low heat for another 10 minutes.
- 17. Stir the chutney occasionally.
- 18. Season the chutney to taste with salt.
- 19. Add cayenne pepper to taste.
- 20. Fill the warm mixture into prepared jars.
- 21. Seal the jars tightly.
- 22. Let the contents cool down completely.
