🍽️ Green Tomato Chutney

Ingredients
- 600 g green tomatoes
- 1 tsp salt
- 40 g whole cane sugar
- 150 ml white wine vinegar
- 50 g dried dates
- 4 shallots
- 5 g ginger
- 1 tsp mustard powder
- 1 tsp hot paprika powder
- 0.5 tsp turmeric powder

Instructions
- 1. Wash the tomatoes thoroughly. Cut out the hard stem areas in a wedge shape and chop the fruits into coarse cubes. Sprinkle the vegetables with one teaspoon of salt and half of the specified sugar amount. Mix everything well, cover the bowl, and let the mixture sit overnight.
- 2. Strain the tomatoes through a sieve the next day and place them in a cooking pot. Stir in the vinegar. Pit the dates and chop them finely. Peel the shallots, dice them small, and mix them together with the dates and the remaining sugar into the tomatoes.
- 3. Bring the mixture to a boil while stirring occasionally. Then let it simmer gently for about 35 minutes. Use this time to peel the ginger and either grate it or dice it finely.
- 4. Stir in mustard powder, paprika powder, turmeric powder, and the prepared ginger. Let the spices simmer for another 10 to 15 minutes while stirring occasionally until a thick chutney forms. Adjust the spice quantities to your personal taste.
- 5. Season the chutney with salt and pepper to taste. Fill it into prepared jars and seal them tightly.
