🍰 Crispy Churros with Chocolate Dip

Ingredients
- 1 pinch salt
- 300 g wheat flour Type 1050
- 200 g dark chocolate couverture
- 200 ml whipping cream
- 1 tsp grated organic orange zest
- 200 ml plant-based frying oil
- 1 tbsp raw cane sugar
Instructions
- 1. Put 500 milliliters of water and a pinch of salt into a pot.
- 2. Bring the mixture to a boil with a lid on.
- 3. Remove the pot from the heat briefly.
- 4. Pour in the flour all at once.
- 5. Stir the mixture smooth with a cooking spoon.
- 6. Place the pot back on the heat.
- 7. Stir for about 3 minutes.
- 8. Stop when the dough forms a firm ball that pulls away from the bottom of the pot.
- 9. Transfer the dough into a bowl.
- 10. Let the dough cool down, covered, for 10 minutes.
- 11. Fill the dough into a piping bag.
- 12. Use a medium star tip with approx. 1 cm diameter.
- 13. Roughly chop the chocolate.
- 14. Melt the chocolate together with the cream over a bowl of hot water.
- 15. Stir constantly.
- 16. Remove the bowl from the hot water.
- 17. Let the sauce cool down slightly.
- 18. Stir in the finely grated orange zest.
- 19. Heat the frying oil in a deep pot to 170 degrees Celsius.
- 20. Test the temperature by holding the wooden handle of a spoon in the oil.
- 21. If small bubbles rise around it, the oil is ready.
- 22. Pipe the dough into pieces about 12 centimeters long directly into the hot oil.
- 23. Fry the churros for 4 to 5 minutes until golden brown.
- 24. Turn them once.
- 25. Lift the finished churros out of the oil with a slotted spoon.
- 26. Let them drain well on kitchen paper.
- 27. Sprinkle the churros with sugar.
- 28. Serve them best still warm alongside the chocolate sauce for dipping.
