  1. 1. Put 500 milliliters of water and a pinch of salt into a pot.
  2. 2. Bring the mixture to a boil with a lid on.
  3. 3. Remove the pot from the heat briefly.
  4. 4. Pour in the flour all at once.
  5. 5. Stir the mixture smooth with a cooking spoon.
  6. 6. Place the pot back on the heat.
  7. 7. Stir for about 3 minutes.
  8. 8. Stop when the dough forms a firm ball that pulls away from the bottom of the pot.
  9. 9. Transfer the dough into a bowl.
  10. 10. Let the dough cool down, covered, for 10 minutes.
  11. 11. Fill the dough into a piping bag.
  12. 12. Use a medium star tip with approx. 1 cm diameter.
  13. 13. Roughly chop the chocolate.
  14. 14. Melt the chocolate together with the cream over a bowl of hot water.
  15. 15. Stir constantly.
  16. 16. Remove the bowl from the hot water.
  17. 17. Let the sauce cool down slightly.
  18. 18. Stir in the finely grated orange zest.
  19. 19. Heat the frying oil in a deep pot to 170 degrees Celsius.
  20. 20. Test the temperature by holding the wooden handle of a spoon in the oil.
  21. 21. If small bubbles rise around it, the oil is ready.
  22. 22. Pipe the dough into pieces about 12 centimeters long directly into the hot oil.
  23. 23. Fry the churros for 4 to 5 minutes until golden brown.
  24. 24. Turn them once.
  25. 25. Lift the finished churros out of the oil with a slotted spoon.
  26. 26. Let them drain well on kitchen paper.
  27. 27. Sprinkle the churros with sugar.
  28. 28. Serve them best still warm alongside the chocolate sauce for dipping.
