  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat. (Alternatively: 180 degrees Celsius fan-assisted or gas mark 3).
  2. 2. Cut the vanilla pod lengthwise. Scrape out the small seeds with a knife and put them into a bowl.
  3. 3. Add the egg and the brown sugar to the vanilla seed mixture.
  4. 4. Stir in the softened butter until everything is well combined.
  5. 5. Take a second, separate bowl. Add the flour, the baking powder, and the salt.
  6. 6. Gently fold the dry mixture (flour, powder, salt) into the wet butter-sugar mixture. Stir only until no dry flour is visible.
  7. 7. Add the chocolate chips to the dough. Mix them evenly so they are distributed throughout.
  8. 8. Line your baking sheets with parchment paper.
  9. 9. Take spoonfuls of dough and form small balls. Place them on the sheets with some space between them.
  10. 10. Bake the cookies in the oven for 15 minutes.
  11. 11. Take the sheets out of the oven. Place the cookies on a wire rack.
  12. 12. Let the cookies cool completely on the rack before you eat them.
