🍰 Crunchy Chocolate Chip Cookies

Ingredients
- 1 vanilla pod
- 1 egg
- 130 g brown sugar
- 150 g soft butter
- 150 g spelt wholemeal flour
- 0.5 tsp baking powder
- 0.25 tsp salt
- 150 g chocolate chips
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat. (Alternatively: 180 degrees Celsius fan-assisted or gas mark 3).
- 2. Cut the vanilla pod lengthwise. Scrape out the small seeds with a knife and put them into a bowl.
- 3. Add the egg and the brown sugar to the vanilla seed mixture.
- 4. Stir in the softened butter until everything is well combined.
- 5. Take a second, separate bowl. Add the flour, the baking powder, and the salt.
- 6. Gently fold the dry mixture (flour, powder, salt) into the wet butter-sugar mixture. Stir only until no dry flour is visible.
- 7. Add the chocolate chips to the dough. Mix them evenly so they are distributed throughout.
- 8. Line your baking sheets with parchment paper.
- 9. Take spoonfuls of dough and form small balls. Place them on the sheets with some space between them.
- 10. Bake the cookies in the oven for 15 minutes.
- 11. Take the sheets out of the oven. Place the cookies on a wire rack.
- 12. Let the cookies cool completely on the rack before you eat them.
