🍲 Cold Cucumber-Mint Soup (Chłodnik ogórkowo-miętowy) from Poland

Ingredients
- 1 cucumber
- 1 onion
- 1 tsp olive oil
- 2 tsp sugar
- 400 ml vegetable broth
- Tabasco
- 2 tsp lemon juice
- salt
- pepper (from the mill)
- 100 g yogurt
- mint
- baguette
Instructions
- 1. Wash the cucumber, peel it, and cut it in half lengthwise. Remove the seeds with a spoon and slice the halves into thin pieces.
- 2. Peel the onion and dice it finely. Sauté it in hot oil in a pan until soft and translucent. Add the cucumber slices, sprinkle with sugar, and let them caramelize slightly.
- 3. Pour in the broth, bring the mixture to a boil, and add the mint. Blend everything until smooth, let it cool, and season with Tabasco, lemon juice, salt, and pepper to taste. Place the soup in the refrigerator.
- 4. Stir the yogurt into the cold soup and serve it in small bowls.
