🍽️ Chinese egg noodles with seafood

Ingredients
- 4 tbsp peanut oil
- 250 g raw shrimp (cleaned, peeled)
- 0.25 tsp ginger powder
- 2 spring onions (chopped)
- 2 tsp cornstarch
- 0.5 tsp sugar
- 2 tbsp soy sauce
- 1 large carrot (cut into thin strips)
- 2 stalks celery (finely chopped)
- 150 g small mushrooms (cleaned)
- 250 g Lo Mein noodles (Chinese egg noodles) or thin spaghetti
- 0.5 tsp salt
- 0.5 garlic clove (crushed)
Instructions
- 1. Cook the noodles exactly according to the package instructions. Drain them, but reserve half a cup of the cooking water and set both aside.
- 2. Heat oil and garlic in a large pan or wok over high heat. Briefly fry carrots, spring onions, and celery, then add the mushrooms and continue frying for a short time.
- 3. Add the shrimp and fry for another minute while stirring. Dissolve the starch in the reserved noodle water and add soy sauce, sugar, salt, and ginger. Mix well and cook briefly so the vegetables remain crisp. Toss in the noodles and heat through.
